Our Organic Cocoa Nibs have been fermented, sun-dried, and roasted at a low temperature (130°F) for 45 minutes to maintain the antioxidant content and reap the most benefits from cocoa beans. After roasting, the Hispaniola beans are sorted and cleaned. The flavor characteristics of fermented cocoa nibs are much richer and more aromatic than non-fermented, raw cocoa nibs.
During roasting, the cocoa nibs darken to a rich, brown color and acquire the superior chocolate flavor and aroma of pure cocoa nibs.
Cocoa Nibs can also be placed in a dedicated grinder for spices and ground as true cocoa powder. Candy them or leave plain to sprinkle as a topping on hot cereals, yogurts and smoothies, or fold into baked goods for crunch and a burst of chocolate.
