Our Organic Cocoa Nibs have been fermented, sun-dried, and roasted. After roasting, the Hispaniola beans are sorted and cleaned.
The flavor characteristics of fermented cocoa nibs are much richer and more aromatic than non-fermented, raw cocoa nibs. During roasting, the cocoa nibs darken to a rich, brown color and acquire the superior chocolate flavor and aroma of pure cocoa nibs.
