Calamondin oranges are a cross between the Mandarin orange and the kumquat. Tasty as this may sound, the variety is quite sour, yet very juicy, so it is used as an ingredient rather than eaten out of hand. This fruit is small, about one-inch in diameter, with a thin, smooth, mottled green-orange skin coloring.

Variegated Calamondin is used where the tartness of a lemon is required and is often used in preserves or as a flavoring in tea.

Choose citrus that feels heavy (juicy) for its size with a soft but not wrinkled skin that is bright not dull in color. The fruit will stay fresh two weeks under proper refrigeration.
