Melissa’s Burgundy Truffles are harvested in southern Italy and closely resemble Black Summer Truffles in their knobby texture and dark exterior coloring. The interior of this truffle is light chocolate brown in color. The flavor and aroma of the Burgundy Truffle is more robust than Summer Truffles, though not as pungent as the Black Winter Truffle. Burgundy Truffles are best when used uncooked and are typically shaved raw over pasta, rice, egg or potato dishes, and as a finishing touch to sauces or meat dishes.
Choose truffles with a deep black-color and a fine web of whitish veins. Store in the refrigerator in an airtight glass container or paper bag filled with uncooked rice to protect from moisture.
