Blackeyed Peas with Tomato Basil and Garlic

11 oz. Black-eyed Peas 
2 cloves Peeled Garlic minced 
1 Organic Tomatoes diced small 
2 tablespoons Basil cut into ribbons 
Kosher Salt to taste 
Cracked Black Peppercorns to taste 


Cook the blackeyed peas according to the package directions. 

Once the peas are cooked, add the garlic and tomato and cook for 2 minutes. 

Off the heat, add the basil and season with salt and pepper. 


If you like some heat, add some fresh minced serrano chile when you add the garlic.
