Baby White Potatoes with Herbs and Lemon Olive Oil

2 pounds Baby White Potatoes cut into 1 inch pieces
1/4 cup Extra Virgin Olive Oil
1/2 cup Red onion chopped
1/2 cup Organic Bell Pepper (use Red Bell Pepper) chopped
1/4 cup Organic Lemon juice freshly squeezed
2 tablespoons Oregano
2 teaspoons Mint chopped
2 teaspoons Salt
3/4 teaspoon Ground Black Pepper

Steam potatoes just until tender, about 10 minutes.
Transfer potatoes to large bowl.
Add oil to potatoes and toss to coat.
Mix in onion, bell pepper, lemon juice, oregano, mint, salt and pepper.

(Can be made 4 hours ahead. Cover; chill. Let stand at room temperature 1 hour before serving.)
