White Grapefruit Sparkling Punch

2 cups Granulated Sugar
2 cups Cold Water
1 (2-inch) piece Melissa’s Fresh Ginger, sliced
2 cups (packed) Melissa’s Fresh Mint
1 (1 liter) bottle Vodka
6 Melissa’s White Grapefruit
2 Limes
1 (1 liter) bottle Club Soda

In a saucepan, add the sugar, water and ginger.

Bring to a boil, stirring to dissolve the sugar and remove from the heat. Stir in the mint and set aside to steep fo 30 minutes. This is the syrup.

Strain the syrup and discard the mint and ginger. Let cool.

In a large pitcher or punch bowl, Add the vodka and the juice from the grapefruit and limes.

Stir in the syrup and the club soda.

Serve over ice with a mint garnish.

Makes about 14 to 16 cups.
