Quinoa Patties with Sweet and Spicy Relish

2 tablespoons Extra Virgin Olive Oil
1 package Melissa's Cooked Quinoa, cut into 10 slices
Kosher Salt and Freshly Ground Black Pepper
1 Melissa's Perfect Sweet Onion, diced small
2 Melissa's Enjoya Peppers, stem and seeds removed; diced small
1 Melissa's "Don Enrique" Pickled Jalapeño Pepper, diced small
2 (1.7 oz.) packages Melissa's Authentic Hollandaise Sauce

Heat the oil in a large pan over high heat.

Add the quinoa and sear until crispy and browned. Flip them over and repeat. Remove them from the pan and season them with the salt and pepper. Set aside.

In the same pan, over high heat, caramelize the onions. Add more olive oil if needed. Add the Enjoya peppers and the jalapeño. Sauté until just soft but still crisp, about 5-6 minutes. Stir in the Hollandaise Sauce, check the seasoning and remove from the heat.

To serve, place 1 quinoa patty on a plate and top with the relish. Repeat for the remaining patties. Makes 10 servings.
