2 cups Pineapple diced
2 cups Maradol Papaya (other fresh Papaya may be substituted)
1/2 cup Organic Bell Pepper (use Red Bell Pepper) diced
1/2 cup Maui Onions diced
1 Organic Garlic minced
1 small Thai Chile seeded and chopped
2 tablespoons Mint (use Mint Leaves) chopped
In a bowl, combine all ingredients with salt to taste and let stand at room temperature for 1 hour.
Relish may be made 1 day ahead and chilled, covered. Serve relish at room temperature.
