Mediterranean Beet and Chickpea Salad

1 tablespoon lemon juice, freshly squeezed
1 1/2 tablespoons olive oil
1 – (9 oz.) package Melissa’s Peeled & Steamed Garbanzo Beans
1 – (9 oz.) package Melissa’s French Country-Style Red Beets in Balsamic Vinaigrette
1/2 cup crumbled Feta Cheese
Salt and Pepper to taste

Add the lemon juice to a medium bowl and whisk in the olive oil.

Add the garbanzo beans and the beets and toss.

Gently mix in the cheese. If desired, add salt and pepper to taste.
