Kiwano Melon Vinaigrette

3 tablespoons Kiwano/Horned Melon Juice 
1/3 cup Olive Oil 
1/4 cup Dried Cranberries 
1 tablespoon Dijon Mustard prepared 
1/2 teaspoon Minced Garlic 
1/2 teaspoon Salt 
1/2 teaspoon Fresh Ground Black Pepper 
2 tablespoons Water 


Process all ingredients until smooth. 

Serve over your favorite green salad. 


Halve and remove pulp from Kiwano Melon. 

Place in sieve and remove seeds. 

Use extracted juice in recipe.
