2 cups Baby White Potatoes peeled and diced
8 cloves Organic Garlic peeled
1 cup White Onion chopped
1 tablespoon Extra Virgin Olive Oil
1 package Don Enrique Habas Peladas (Dried Peeled Fava Beans), cooked
3 teaspoon Red Wine Vinegar
1 tablespoon Lemon Juice
1/4 cup Extra Virgin Olive Oil
1/4 teaspoon Lemon Pepper
1/2 teaspoons Salt
Place potato, garlic, onion and olive oil in a 3 qt. microwavable casserole.
Microwave covered 15 min. at 100% stirring every 5 min. Set aside to cool.
In food processor fitted with metal chopping blade, process all remaining ingredients.
Add cooled, cooked potato mixture and puree. Scrape into decorative serving bowl.
Garnish with chopped parsley and a frizzle of extra vegetable dippers for an addictive appetizer!
