Water (icy)
1 cup Sugar
1/4 cup Apricot or Peach Brandy
18 Organic Strawberries washed and dried
12 Waterchestnuts
20 Lychee peeled and pitted


Prepare a large pan of ice water.

Combine 1/2 cup sugar and 2 tablespoons brandy in a non-stick pan. Cook over medium-high heat, stirring constantly until melted.\

Dip strawberries in the glaze, then immediately submerge in the ice water to harden. Drain and set aside.

Repeat the same process with the water chestnuts, making another glaze with the remaining sugar and brandy.

To serve, place the glazed water chestnuts in center of each plate, and surround with the glazed strawberries and fresh lychees. Serve immediately.

(To prepare in advance, allow the glazed strawberries and water chestnuts to harden on a wire rack instead of immersing them in ice water.)
