Veggie Pita Bread Sandwiches

Ingredients

2 Pita Bread, halved Hummous (use Red Pepper Hummous) as needed
3 Mini Cucumbers, diced
1/2 pound Baby Heirloom Tomatoes, quartered
2 small cans Sliced Black Olives, drained
2 cups Romaine Lettuce, chopped
Salt and Pepper to taste

Directions

Open up the 4 halves of pita to create a pocket. Spread desired amounts of hummous in each pocket.

Fill each pocket with equal parts of the remaining ingredients. Season to taste.

Note:

Kids love pita bread because the pocket helps hold the filling in.
