Vegetarian Tamale Filling

2 cups Sharp Cheddar Cheese shredded
2 cups Swiss Cheese shredded
6 ounces Black Olives chopped
6 ounces Pine Nuts chopped
2 Onions chopped
8 cloves Peeled Garlic
2 tablespoons Dried Oregano
2 tablespoons Ground Cumin
1 8 ounce can Whole Corn Kernels drained
4 Anaheim Chile or Pasilla Chiles chopped
2 teaspoons Olive Oil


Combine all ingredients in a large bowl, spread on prepared masa dough and husks, fold and steam for 1 hour.
