Pineapple, Coconut & Toasted Macadamia Nut Tamales

1 Tamale Kit
1 Organic Pineapple crushed in a food processor and juice reserved
1/4 cup Sugar
1/2 tablespoon Salt
3 ounces Dried Coconut Chips processed to bits
3 ounces Macadamia Nuts toasted and processed into bits


Measure pineapple juice to 2 cups and mix with masa. Add remaining ingredients to masa, mix well. Follow directions on tamale kit package for filling corn husks and steam for 35 - 45 minutes.

Serve two dessert size tamales along with your favorite Melissa's Dessert Sauces for a tasty treat.
