Wheat Berry and Herb Marinated Olive Salad

  • Ingredients

  • For the Olives

  • 1 cup Assorted Olives
  • 1/2 head Organic Garlic
  • 1 sprig Sage (fresh)
  • 1 sprig Rosemary (fresh)
  • 1 sprig Thyme (fresh)
  • 1 organic lemon
  • Extra Virgin Olive Oil

  • For the Salad

  • 2 cups Wheat Berries cooked
  • 2 tablespoon Thompson Seedless Raisins or Flame Seedless Raisins
  • 1 tablespoon Pine Nuts toasted
  • 2 cloves Organic Garlic minced
  • 2 small Shallots minced
  • 2 tablespoon Organic Parsley (fresh) chopped
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon lemon juice
  • Salt and Cayenne Pepper to taste

  • Directions

  • For the Olives

  • Combine all ingredients in a jar and cover tightly. Let stand in a cool place for at least one week.

  • For the Salad

  • In a medium mixing bowl, combine all the salad ingredients with the marinated olives and season to taste.
