Soyrizo Breakfast Wrap

1 teaspoon Olive Oil
1 Soyrizo diced
1 1/2 cups Baby Dutch Yellow® Potatoes (DYP's)
1 bunch Organic Green Onions diced
2 tablespoons Organic Cilantro chopped
3 Eggs beaten
1 cup Soy Shreds
6 Tortillas gordita style (6-inch)
Salt and Pepper to taste
Fire Roasted Salsa


Heat pan on medium-high, add oil and heat. Add soyrizo and sauté until lightly browned, about 5 min, stirring occasionally.

Add DYP's, green onions and cilantro; sauté 5 more minutes, stirring occasionally. Reduce heat to medium; add eggs and Soy Shreds.

Add salt and pepper to taste. Stirring occasionally cook eggs until firm.

Remove from pan; divide equally among tortillas; roll burrito style. Cut in half and serve.
