Roasted Potatoes and Organic Boiler Onions

1 1/2 pounds Baby Red Potatoes
1 1/2 pounds Yukon Gold Potatoes cut into 1 1/2 inch cubes
1 1/2 pounds Organic Boiler Onions peeled
1/4 cup Olive Oil
Salt and Fresh Ground Black Pepper to taste
Watercress or Italian Parsley


In a large baking dish, combine baby red potatoes, yellow potatoes and boiler onions with olive oil.

Spread out in an even layer. Bake in preheated 350 degrees oven, stirring every 15 minutes, for 55 minutes, or until golden brown.

Transfer vegetables into a serving bowl. Season with salt and pepper. Garnish with watercress or Italian parsley.
