Roasted Baby Vegetables

Ingredients

6 Baby Zucchini with flowers attached
6 Baby Summer Squash
6 Baby Patty Pans
6 Baby Crookneck
2 Roma Tomatoes blanched, peeled and diced
1 teaspoon Salt
1 teaspoon Black Pepper
1 tablespoon Olive Oil
1 teaspoon Melissa’s Roasted Garlic

Directions

Preheat oven to 350°F. Toss baby vegetables in olive oil, garlic and season with salt and pepper.

Roast in oven for 25 to 30 minutes or until soft. Toss vegetables with diced tomatoes and serve hot.
