Puffed Rice Cookie Rounds

3 tablespoons Unsalted Butter

12 oz.Marshmallows

6 cups Puff Rice Cereal

1 3 ounce package Dried Cranberries

1 3 ounce package Dried Blueberries


In a sauce pan, melt the butter and the marshmallows, stirring constantly. In a large bowl, mix together the cereal and the dried berries. Add the melted mixture and stir well to combine. Spread the mixture onto a sheet pan covered with parchment paper. It should be about 1-inch thick. Let cool. Once cool, using a 2½ or 3 -inch ring cutter, cut out the cookies. Make sure to cut the cookies as close as possible to minimize waste.


Don't throw away those cookie scraps. Let the kids nibble on them.
