Simple Yu Choy Salad

1 head Yu Choy Sum washed
1 tablespoon Mustard dried (1 tbs water)
1 tablespoon ginger root - grated fresh
2 tablespoons Soy Sauce
1 To Your Taste salt - pinch
1 pinch Sugar


Prepare Melissa’s Yu Choy Sum by tearing leaves into shreds and coarsely dicing stalks and any flowers. 

Steam or boil for 2 or 3 minutes. 

Drain well. 

Mix together all other ingredients. 

Toss with Melissa’s Yu Choy Sum. 

Serve alone or over hot noodles
