Saturn Peach, Arugula and Plumcot Salad

3 tablespoons Raspberry Vinegar
1/2 teaspoon Dijon Mustard
5 tablespoons Olive Oil
1 pinch Sugar
1/4 teaspoon Salt
pinch Pepper
5 cups Arugula leaves torn
4 Flavorosa Plumcots sliced
1/4 cup Pine Nuts toasted
2 Saturn Peaches ripe and sliced


Toast pine nuts for 5 - 8 minutes in 350 degrees F. oven or toaster oven.
Combine dressing ingredients; mix together well.
Arrange salad ingredients in bowl.
Combine dressing with salad.
Sprinkle with pine nuts.
