Potato Curry

4 tablespoons Oil 
2 Organic Yellow Onion sliced 
1 clove Organic Garlic 
4 large Organic Russet Potato peeled and diced 
1 cup Water 
1 can Organic Tomatoes liquid reserved 
1 1/2 tablespoons Coconut Milk 
1/2 teaspoon Turmeric 
1/2 teaspoon Ground Cinnamon 
1/2 teaspoon Cardamon 
1/2 teaspoon Black Pepper ground 
1/2 teaspoon Cumin 
1/2 teaspoon Ginger Root ground 
1/2 teaspoon Sugar 
1/2 teaspoon Chile Powder 
1/2 teaspoon Salt 


Heat oil, add onion and saute until transparent. Add garlic and potatoes and saute 2 additional minutes. 

Add remaining ingredients, bring to a boil, and simmer until potatoes are cooked. About 20-30 minutes. 

If too thick, add reserved tomato liquid. Serve over rice.
