1 Tablespoon Extra Virgin Olive Oil
1 package Melissa's Soyrizo
1 each Sweet Onion -- chopped
1 each Apple -- peeled and chopped
3 Tablespoons Brown Sugar
1/2 teaspoon Kosher Salt
1/2 cup Ketchup
1/2 bottle Beer (drink the other half)
1 each Green Bell Pepper -- chopped
3 14 oz. cans Great White Northern Beans -- drained
1 cup Hot Water
Preheat the oven to 350ºF.
In a 10-inch cast iron skillet, heat the oil and add the soyrizo.
When heated through, add the onion and apple and cooked until the apples begin to soften.
Stir in the brown sugar and salt and cook for 2 minutes. Next, add the ketchup, beer, bell pepper, beans and water.
Bring to a boil, remove from the burner and place in the preheated oven. Bake for 30 minutes.
Remove from the oven and let cool to room temperature before serving.
This is best at room temperature.
