Organic Sweet Potatoes and Longan with Candied Ginger

2 1/2 cups Cold Water 
1 pound Organic Sweet Potatoes peeled and cut into 0.5 inch cubes 
1/4 cup Sugar 
3 tablespoons Chopped Crystallized Ginger 
1 Organic Mango peeled seeded and diced 
1 Banana peeled and cut into 1/4 inch slices 
3 ounces Longans chopped 
1/4 cup Pine Nuts toasted 


In a pan, combine the water and sweet potatoes, and bring to a boil. Simmer for 10 minutes. 

Add the sugar and ginger, and mix well. 

Continue cooking until the sweet potatoes are tender on the outside and slightly crunchy in the center, about 10 more minutes. 

Spoon the sweet potato mixture into 4 shallow bowls. Top with mango, banana, pine nuts, and longan. 

Serve warm or at room temperature.
