Marinated Orange and Onion Salad

2 cups Orange sections 
8 whole Boiler Onions peeled and sliced 
1/4 cup Red Wine Vinegar 
1/4 cup Olive Oil light 
2 tablespoons Italian Parsley chopped 
3 cups Salad assorted greens 
Organic Grinders Garden Herb w/Sea Salt to taste 
Organic Grinders Rainbow Peppercorn, to taste 


In a medium-size bowl, combine orange sections and onions. 

Set aside. 

In a small bowl, combine vinegar, olive oil and parsley. 

Pour over fruit and onions, mixing well. 

Cover and chill 3 hours, stirring occassionally. 

Place salad greens on individual salad plates, arranging oranges and onions evenly over greens. 

Drizzle with remaining oil mixture if desired.
