Melissas Crepes with Passion Fruit Sauce

1/2 cup Passion Fruit pulp (seeds strained if desired) about 6 needed
1/2 cup Sugar
2 tablespoons Cornstarch
1/2 cup Water
1 Egg Yolk
1 tablespoon Butter or Margarine
10 Melissa's Crepes
Whipped Cream (optional)


Combine sugar and cornstarch in 1 quart sauce pan, stir in passion fruit pulp and water.

Bring to a boil over high heat, stirring constantly for about 30 seconds.

Beat 1/4 cup of passion fruit mixture with egg yolk, then combine yolk with remainder of the fruit mixture.

Add butter and continue to cook until well blended and thickened.

Serve with Melissa's ready made crepes and top with whipped cream if desired. Makes 10 crepes.
