1 whole Chicken about 3 - 4 pounds, rinsed and patted dry
4 tablespoons Organic Garlic *Roasted and Chopped
1 cup Basil chopped
2 tablespoons Olive Oil
Pre-heat oven to 400°F.
Blend the garlic and basil well. Carefully separate the skin of the chicken from meat. Spread the garlic - basil mixture under the skin, coating as much of the meat as possible. Brush the skin with olive oil. Place the chicken on a rack in a roasting pan for 45 minutes, or until the skin is crisp, and chicken is cooked.
Remove from oven and cool. Cut and serve.
Great with Baby Red Mashed Potatoes and Garlic Potatoes.
