Fresh Garbanzo Bean Salad

1 bag Mixed Baby Greens
2 large Organic Carrots, peeled and diced
1/2 Organic Red Bell Pepper or Enjoya Pepper, diced
1/2 Organic Yellow Bell Pepper or Enjoya Pepper, diced
1 package Melissa's Peeled & Steamed Garbanzo Beans, rinsed
3 Organic Green Onions, sliced
1/4 cup Red Wine Vinegar
1 teaspoon Organic Lemon juice, freshly squeezed
1/2 cup Olive Oil
1/2 cup Soft Goat Cheese, crumbled

DirectionsIn a large bowl, combine the first 6 ingredients.

In a separate bowl, add the vinegar and lemon juice.

Slowly whisk in the olive oil until emulsified.

Add the dressing and goat cheese to the salad and gently toss to combine.

Makes about 2-4 servings.
