Egyptian Blackeyed Peas (Pareve)

1 tub blackeyed peas - 
To Your Taste Salt 
1 Red onion diced OR 2 cloves garlic - minced 
To Your Taste Black Pepper 
1/2 teaspoon Cumin (optional) 
5 tablespoons Olive Oil 
1/3 cup Lemon Juice 


Place the peas in a saucepan and cover with water. 

Boil the peas until tender, about one hour. Drain and dry the peas. 

Mix all remaining ingredients together in a bowl. Serve.
