1 package Won Ton Wrappers
1/2 cup Shrimp Paste (see recipe below)
1 cup Shrimp (fresh and raw) diced
1/2 cup Green Garlic Chives chopped
1/4 Scallions chopped
1 tablespoon Light Sesame Oil
1 tablespoon Shallots oil (Salad Oil infused with Shallots)
Salt to taste
White Pepper to taste
Fresh Shrimp Paste
1/2 pound Shrimp (scant) ground finely
1/4 cup Solid Vegetable Shortening (Crisco)
1 teaspoon Light Sesame Oil
1/4 teaspoon Ginger Juice
1 Egg Whites
1 pinch Salt and Pepper
Beat all ingredients together very thoroughly in mixing bowl
Mix together filling ingredients evenly.
Place 1 tablespoon filling in center of Won Ton Wrappers that have been rounded off using the bottom of a glass or other round object.
Pinch together to form a small sack with 3 corners at the top.
Place in steamer for 3 minutes, remove.
Serve with soy sauce, chili oil and hot mustard.
