Homemade Vegetable Pizza
By Melissa's Corporate Chefs

Homemade Vegetable Pizza

1 package Yeast
1/2 teaspoon Sugar
3/4 Warm Water
2 cups All-Purpose Flour
2 tablespoons Olive Oil

2 cups Pizza Sauce
1 small Green Bell Pepper, sliced into rings
1/2 cup Mushrooms
1/4 cup Red Onion, minced
Organic Tomatoes
1 package shredded Mozzarella Cheese

Mix the yeast sugar and water in a bowl. Let stand 5-10 minutes until bubbles begin to form. Sift the half the flour into a large mixing bowl. Add the oil and the yeast mixture. Combine, then add remaining flour and a pinch of salt. Using your hands or standing mixer fitted with dough hook, mix dough well. Once the dough is formed, continue kneading it until the flour is incorporated and texture is smooth. Let the dough rest in a lightly greased mixing bowl for about 30 minutes. Then, roll out and create your pizza dough. Or, you can use the store bought crust.

Preheat oven to 375F. Place rack in lower third of oven.

Spread just enough sauce to thinly coat pizza top. Slice vegetables and spread evenly around crust. Then sprinkle with soy shreds. Bake in 375°F oven until crust turns golden brown and cheese is bubbly, about 20-30 minutes.

Makes 8 servings.
