Fresh Mango and Teriyaki Tofu over Noodles

1 package Yakisoba Noodles use Original Flavor
2 tablespoons Extra Virgin Olive Oil
1/3 cup Water
1 eight-ounce package Organic Baked Tofu (use Teriyaki Baked Tofu flavor) cubed
5 3/4 inch Organic Mango peeled pit removed and sliced into spears
Pico de Gallo Seasoning to taste


Prepare the Noodles in the Following Manner
Puncture the noodle package and microwave on high for one minute to loosen the noodles. Heat the olive oil in a wok over high heat and stir fry the noodles for 1 minute. Add the water and the sauce base pack and stir fry for 2 more minutes.

Place the noodles on a serving plate and top with the tofu and mangos. Season with the Pico De Gallo.

I like to add a few cooked garlic shrimp to this dish.
