Citrus Salad

Citrus Salad


2 cups Organic Oranges sectioned
2 cups Organic Grapefruit - sectioned
2 Organic Limes or Lemons peeled seeded and sectioned
1 tablespoon Sherry Vinegar or to taste
3 tablespoons Organic Oranges or Grapefruit juice freshly squeezed
1 teaspoon Ginger Root peeled and finely minced
1 pinch Cayenne Pepper
Salt and Fresh Ground Black Pepper to taste
1 tablespoon Mint leaves minced
1 tablespoon Extra Virgin Olive Oil
Honey to taste


Combine the citrus sections in a mixing bowl.

In a separate small bowl, combine the vinegar, the 3 tablespoons of reserved citrus juice, ginger, cayenne, salt and pepper, and mint.

Whisk in the olive oil and add drops of honey as necessary to balance the tartness of the fruit.

Pour the dressing over the citrus and stir gently to combine.
