Asparagus and Orange Salad

Asparagus and Orange Salad

8 ounces Organic Asparagus cut into
2 inch pieces 1 teaspoon Orange Zest
2 Organic Tomatoes cut into eighths
1/2 head Organic Romaine Lettuce, washed, spun dry and chopped
4 ounces of your favorite Ginger Soy Salad Dressing

Cook asparagus in boiling, salted water 1 min.; refresh in ice water to stop cooking.

Drain and set aside.

After zesting orange, peel and cut into segments.

In a bowl, mix asparagus, orange zest and segments, tomatoes and lettuce.

Toss with Melissa’s Good Life Food Ginger Soy Dressing.
