Tofu Vegetable Medley
Ingredients
4 tablespoons sesame oil
 12.3 ounces Melissa’s Good Life Food Organic Silken Firm Tofu, drained and cut into ˝ inch cubes
 2 tablespoons ginger, grated
 1 clove garlic, minced
 1/2 cup leeks, sliced
 1/2 cup Melissa’s Good Life Food Ginger Teriyaki Flavor Your Tofu™ Sauce
 2 cups broccoli florets
 1/2 cup red bell pepper, sliced
 1/2 cup green bell pepper, sliced
 1/2 cup sno peas, sliced
 1 cup mushrooms, sliced
 1 cup mandarin orange segments
 1 tablespoon Melissa’s Good Life Food Peanut Passion Sprinkles

Preparation
Heat 2 Tbsp. sesame oil, add tofu and sauté until browned.
Add ginger, garlic and leeks, sauté briefly, remove and toss with sauce, set aside. In the same pan, heat remaining 2 Tbsp. sesame oil and sauté broccoli and peppers for 3 minutes, add sno peas and mushrooms, stir-fry until heated through. Remove from heat, add orange segments and sprinkles. Serve hot.
