Asparagus and Onion Salad
Ingredients
8 ounces asparagus, cut into 2 inch pieces
 1 teaspoon orange zest
 1 orange
 2 tomatoes, cut into eighths
 4 romaine or bibb lettuce leaves, shredded
 4 ounces Melissa’s Good Life Food Dijon Vinaigrette Salad Dressing
 4 tablespoons Melissa’s Good Life Food Tropical Almond Sprinkles

Preparation
Cook asparagus in boiling, salted water 1 min.; refresh in ice water to stop cooking. Drain and set aside. After zesting orange, peel and cut into segments. In a bowl, mix asparagus, orange zest and segments, tomatoes and lettuce. Toss with Melissa’s Good Life Food Dijon Vinaigrette Dressing. Sprinkle with Melissa’s Good Life Food Tropical Almond Sprinkles.
