Eggplant Penne Arabbiata
Ingredients
8 ounces penne pasta
 3 tablespoons olive oil
 1 Japanese eggplant, cut into 1/2" rounds
 1 1/2 cups Melissa’s Good Life Food Organic Arabbiata Pasta Sauce

Preparation
Cook pasta in boiling, salted water until tender. While pasta is cooking, heat oil in a sauté pan and cook eggplant until tender. Season with salt and pepper. Drain pasta, add eggplant and toss with sauce.
