Black Bean Soup (Sopa de Frijoles Negros)

Ingredients

  • 1 pound Black Beans
  • 1 tablespoon Cooking Oil
  • 1/2 cup Onion diced
  • 3 cloves Peeled Garlic chopped
  • Organic Bell Pepper (use Red or Green Bell Pepper) chopped
  • 1/2 cup Organic Celery chopped
  • 1/2 cup Cilantro chopped
  • Salt and Fresh Ground Black Pepper to taste

Directions

Cover beans with water and soak overnight.

Rinse and drain several times. Cook with at least 7 cups of water for 3 hours. Add more water if needed. When the beans are tender, add the remaining ingredients and cook another ½ hour.

To serve, you may want to add any or all of the following:

Fresh lemon juice, Tabasco, sour cream, chives, green onions. Or add one or two eggs, cook for another 2-3 minutes, serve with flour or corn tortillas.
