Ingredients
- 3 cups organic sweet potato - cooked mashed
- 1/2 cup Brown Sugar
- 1/3 cup Milk
- 2 Egg slightly beaten
- 1 teaspoon Vanilla Extract
- 1/2 cup Butter melted
Topping
- 1 cup Brown Sugar
- 1/3 cup Flour
- 1/3 cup Butter melted
- 1 cup Pecans chopped
- 2 cups cranberries - fresh
Directions
Preheat oven to 350 degrees. Combine sugar, milk, eggs, vanilla, and butter with warm mashed potatoes. Stir till well combined. Put potato mixture in a 2 quart casserole dish.
In a small bowl, combine brown sugar, flour, butter, and chopped pecans. Spoon evenly over potato mixture, top with cranberries. Bake about 40 minutes or until topping is bubbling and crisp.
