Strawberry Papaya-Scented Sweet Potatoes

Ingredients

  • Organic Yams (use Garnet or Jewel Yams) cut into large chunks (do not peel)
  • Organic Yellow Onion thick wedge slices
  • 2 Strawberry Papayas sliced in half lengthwise seeds reserved peeled diced
  • Extra Virgin Olive Oil
  • Sea Salt
  • Key Limes Juice freshly squeezed
  • Kumquats sliced in half lengthwise for garnish

Directions

Preheat oven to 375 degrees. Prepare vegetables and strawberry papayas and arrange in a shallow baking dish, avoiding overlap.

Drizzle generously with olive oil and sprinkle lightly with salt and several papaya seeds. Cover tightly and bake for 45 minutes. Remove cover and return to oven to bake until lightly browned.

Just before serving, pour key lime juice over vegetables and papayas, toss gently and transfer to a serving platter. Serve garnished with kumquats.
