South African Sweet Potato Fritters

Ingredients

  • Peanut Oil for frying
  • 1 pound Organic Sweet Potatoes peeled
  • 1/2 cup Flour
  • 1 Egg beaten
  • Salt and Fresh Ground Black Pepper to taste

Directions

Heat 2 inches of oil in a heavy saucepan or fryer to 375 degrees. Grate the sweet potatoes into a medium sized bowl, cover with boiling water, and let stand for 15 minutes.

Drain off the water and slowly add the remaining ingredients to make sure they are well blended. You should have a thickened paste that will hold its shape. If the mixture is too thick, add water; if it is too thin, add flour.

Drop the mixture, a few tablespoons at a time, into the hot oil, and cook the fritters 3-5 minutes, or until they float to the surface, turning them at least once to make sure they are slightly browned on each side. Drain on absorbent paper and serve hot.
 
Note:

Accompany with a spicy sauce and serve as an appetizer, or lightly dust with sugar and serve for dessert.
