Ingredients
- 2 tablespoons Olive Oil
- 2 tablespoons Margarine (or butter)
- 1 pound Russian Banana Fingerling Potatoes cut 1/2 lengthwise
- salt and pepper to taste
- 1/2 cup Onion diced
- 2 teaspoons Chile Powder
- 1/2 teaspoon cumin - ground
- 1/2 Melissa's Organic Bell Pepper (red or green) julienned
Directions
Heat the olive oil and butter on high until melted. Add the potatoes, salt and pepper and cook for 4 minutes. Lower the heat to medium and add the onion. Cook for 3 minutes while stirring often. Stir in the rest of the ingredients and cook for 5 minutes more or until potatoes are fork tender.

This is a great side dish with a nice grilled steak
