Ingredients
- 4 tablespoons Oil
- 2 Organic Yellow Onion sliced
- 1 clove Organic Garlic
- 4 large Organic Russet Potato peeled and diced
- 1 cup Water
- 1 can Organic Tomatoes liquid reserved
- 1 1/2 tablespoons Coconut Milk
- 1/2 teaspoon Turmeric
- 1/2 teaspoon Ground Cinnamon
- 1/2 teaspoon Cardamon
- 1/2 teaspoon Black Pepper ground
- 1/2 teaspoon Cumin
- 1/2 teaspoon Ginger Root ground
- 1/2 teaspoon Sugar
- 1/2 teaspoon Chile Powder
- 1/2 teaspoon Salt
Directions
Heat oil, add onion and saute until transparent. Add garlic and potatoes and saute 2 additional minutes. Add remaining ingredients, bring to a boil, and simmer until potatoes are cooked. About 20-30 minutes. If too thick, add reserved tomato liquid. Serve over rice.
