Organic Sweet Potatoes and Longan with Candied Ginger

In a pan, combine the water and sweet potatoes, and bring to a boil. Simmer for 10 minutes. Add the sugar and ginger, and mix well. Continue cooking until the sweet potatoes are tender on the outside and slightly crunchy in the center, about 10 more minutes.

Spoon the sweet potato mixture into 4 shallow bowls. Top with mango, banana, pine nuts, and longan. Serve warm or at room temperature.
