Okinawa Sweet Potatoes Au Gratin

Ingredients

  • 2 pound Okinawa Sweet Potatoes peeled and sliced 1/4 inch thick
  • 3/4 cup Heavy Cream
  • 1/2 cup Chicken Stock
  • 1 Organic Yellow Onion sliced 1/4 inch thick
  • 1/4 teaspoon Nutmeg ground
  • 1 cup Gruyere Cheese shredded
  • Salt and Pepper to taste

Directions

Layer potatoes and onions evenly in a 2-quart casserole. Mix together cream, stock, nutmeg, salt and pepper. Pour over potatoes. Cover tightly. Bake at 350°F for 30 minutes covered. Uncover and bake 25 more minutes. Sprinkle with cheese and bake 20 minutes longer, until brown. Let stand before serving.
