Ingredients
- 1 package Couscous with Roasted Garlic
- 2 Jalapeno Chiles to taste
- 1 bunch Cilantro washed and stems
- 1 Onion grilled and chopped
- 1 cup Rice Wine Vinegar
- 1 1/2 cup Olive Oil
- 1 1/2 teaspoon Salt
- 3/4 cup Poblano Chiles 1 diced (roasted)
Directions
Cook the couscous according to package's directions. Then in a blender, place the jalapenos, about 2/3 of the cilantro leaves, onion, rice wine vinegar, olive oil and salt and puree well. Adjust seasonings. Pour dressings over couscous, add poblanos and mix well. Garnish with remaining cilantro and serve.
