Ingredients
- Sea Salt or Kosher Salt
- 12 large Shiitake Mushrooms all approximately the same size stems removed and cleaned
- 1/4 cup Rice Flour (see note) or All Purpose Flour
- 2 teaspoons Curry Powder or to taste
- Olive Oil or other Vegetable Oil for frying
Directions
Lightly sprinkle salt on both sides of the mushrooms. Mix the flour and curry powder together and dust the mushrooms liberally with the mixture (tossing it all together in a paper bag is an easy way to go). Heat 1/8 inch of olive oil in a sauté pan over medium-high heat and cook the mushrooms on both sides until just done, about 2 minutes total. Serve hot.
Chef’s Note:
You can make your own rice flour by buzzing uncooked white rice in a coffee grinder until finely ground. Sift through a fine strainer before using. This is also a great way to clean a coffee grinder!
