Ingredients

  • 1 tub blackeyed peas -
  • To Your Taste Salt
  • 1 Red onion diced OR
  • 2 cloves garlic - minced
  • To Your Taste Black Pepper
  • 1/2 teaspoon Cumin (optional)
  • 5 tablespoons Olive Oil
  • 1/3 cup Lemon Juice

Directions

Place the peas in a saucepan and cover with water. Boil the peas until tender, about one hour. Drain and dry the peas. Mix all remaining ingredients together in a bowl. Serve.
