Cipolline Glazed Radicchio

Ingredients

Glazed Cipolline Onions

  • 1 pound Cipolline Onions
  • 3 ounces Olive Oil
  • 6 ounces Balsamic Vinegar
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper

Radicchio and Spinach

  • 3 ounces Olive Oil
  • 6 cupsĀ Radicchio (lightly packed) rinsed and cut into 2 inch pieces
  • 2 cups Baby Spinach Leaves (lightly packed) rinsed and dried on paper towel

Directions

Glazed Cipolline Onions

Peel onions and place in bowl. Toss well with all ingredients and pour into a flat pan, single layer with all the vinegar and oil. Bake in 375 degree oven for 40 to 60 minutes to caramelize. Turn every 20 minutes. Onions should have a nice dark golden color and vinegar should be reduced to syrup. If pan becomes dry, add some water. Let cool and chop onions, leaving some whole (for garnish). Add chopped onions back to liquid. Keep warm.

Radicchio and Spinach

On medium heat, in a large pan, heat olive oil. Add the radicchio and cook down slowly about 3-5 minutes. Add spinach and cook 1 minute.

Final Preparation and Plating

Stir in glazed Cipolline onions including all the liquid. Cook another minute or so. Serve on hot platter, top each serving with 2-3 whole onions as garnish.
